Little millet Vegan Sushi | Millet Sushi | Vegetarian Sushi

Vegan little millet sushi is a delicious and healthy alternative to traditional sushi free from animal products. You can create a variety of vegan sushi rolls using little millet as a base and filling them with plant-based ingredients.

Ingredients:

For the Little Millet:

  • 1 cup little millet
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

For the Vegan Sushi Fillings (you can mix and match as you like):

  • Avocado slices
  • Thinly sliced cucumber
  • Carrot matchsticks
  • Red bell pepper strips
  • Marinated tofu strips or tempeh
  • Sautéed mushrooms
  • Sliced green onions
  • Vegan mayonnaise or vegan cream cheese (optional)
  • Nori sheets (seaweed sheets)
  • Soy sauce or tamari, for dipping
  • Wasabi and pickled ginger, for serving (optional)

Instructions:

  1. Cook the little millet: Rinse it thoroughly and cook it according to the package instructions, using 2 cups of water for every 1 cup. Once cooked, let it cool to room temperature.
  2. Prepare the sushi vinegar: In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Allow it to cool.
  3. Season the little millet: Transfer the cooked little millet to a large bowl and drizzle the sushi vinegar mixture over it. Gently mix the vinegar into the millet using a wooden or plastic spatula. Let the seasoned millet cool to room temperature.
  4. Prepare the vegan sushi fillings: Slice and prepare your chosen vegan fillings, such as avocado, cucumber, carrot, tofu, or any other vegetables or plant-based ingredients you prefer.
  5. Assemble the sushi rolls: Lay a bamboo sushi rolling mat on a clean surface and place a sheet of plastic wrap on top. Put a sheet of nori, shiny side down, on the plastic wrap. Wet your fingers with water to prevent sticking and then spread a thin layer of seasoned little millet over the nori, leaving about 1 inch of nori at the top uncovered.
  6. Add your desired vegan fillings on top of the millet.
  7. Roll the sushi: Using the bamboo mat and plastic wrap, carefully roll the sushi, applying gentle pressure to shape it into a cylinder. Wet the exposed edge of the nori with water to seal the roll.
  8. Slice the sushi roll: Use a sharp, wet knife to slice the vegan little millet sushi roll into bite-sized pieces.
  9. Serve and enjoy: Serve your vegan little millet sushi with soy sauce or tamari, and you can also include wasabi and pickled ginger for added flavour.
