Ingredients:
For the Little Millet:
- 1 cup little millet
- 2 cups water
- 2 tablespoons rice vinegar

Instructions:
- Cook the little millet: Rinse it thoroughly and cook it according to the package instructions, using 2 cups of water for every 1 cup. Once cooked, let it cool to room temperature.
- Prepare the sushi vinegar: In a small saucepan, combine rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Allow it to cool.
- Season the little millet: Transfer the cooked little millet to a large bowl and drizzle the sushi vinegar mixture over it. Gently mix the vinegar into the millet using a wooden or plastic spatula. Let the seasoned millet cool to room temperature.
- Prepare the vegan sushi fillings: Slice and prepare your chosen vegan fillings, such as avocado, cucumber, carrot, tofu, or any other vegetables or plant-based ingredients you prefer.
- Assemble the sushi rolls: Lay a bamboo sushi rolling mat on a clean surface and place a sheet of plastic wrap on top. Put a sheet of nori, shiny side down, on the plastic wrap. Wet your fingers with water to prevent sticking and then spread a thin layer of seasoned little millet over the nori, leaving about 1 inch of nori at the top uncovered.
- Add your desired vegan fillings on top of the millet.
- Roll the sushi: Using the bamboo mat and plastic wrap, carefully roll the sushi, applying gentle pressure to shape it into a cylinder. Wet the exposed edge of the nori with water to seal the roll.
- Slice the sushi roll: Use a sharp, wet knife to slice the vegan little millet sushi roll into bite-sized pieces.
- Serve and enjoy: Serve your vegan little millet sushi with soy sauce or tamari, and you can also include wasabi and pickled ginger for added flavour.
