Kodo Millet Lemon Rice

Ingredients

  • 1 Cup Kodo millet

  • 1 Tsp urad dal

  • 1 Tsp peanuts

  • 1 tbsp lemon juice

  • 1 Tsp curry leaves

  • 2 green chilies

  • 2 Green chili

  • 1 Tbsp Coriander leaves

  • 1Tsp Jeera

  • 1 Tsp Mustard seeds

  • 1 Tsp turmeric powder

  • Salt for taste

  • 1Tbsp Ghee or Oil

  • 2 Tbsp Shredded coconut

Ready in 20 minutes

Preparation

  1. Wash and Soak Kodo millet for 2 Hours, and cook in an open vessel or pressure cooker for about 10- 15 mins.

  2. In a pan add Ghee let it heat and then add mustard seeds, jeera, urad dal, and peanuts Roast them well.

  3. Add the chopped curry leaves and chopped green chili, Saute it. Now add the cooked Kodo millet, turmeric powder, and salt and mix well.

  4. Add the lemon juice and mix well.

  5. Garnish it with coriander and grated coconut. Serve hot or warm.

Tips

Soaking the millet reduces the cooking time and pulao tastes a lot better.
